Winter Chicken

This is a very warming chicken dish which is good to come home to on
a cold night. I invented the recipe by crossing a hotpot with coq au vin.
It is a complete meal in itself, so you don't need to do any veg with it.
Ingredients
- 12oz of chicken breast (about 3 or 4 breasts).
- 6oz Mushrooms
- 2 Large carrots
- 1 Large onion
- 4 Large potatoes.
- 1/2teaspoon Basil
- 6 Rashers of streaky bacon
- 2glasses Red wine.
- Vegetable Oil
Method
Cube the chicken and fry lightly in the oil, then transfer to a casserole.
Slice the mushrooms, carrots and onions and add to the chicken. Sprinkle
the basil evenly, then pour on the red wine. Mix thoroughly. Now peel
the potatoes and grate coarsely, or slice thinly (I use the shredder
attachment on the food mixer), and make a layer of potato on top of the
other ingredients in the casserole. Cover and cook at 325F for one hour.
Then remove the lid, and lay the bacon on top of the potatoes, and return
to the oven for a second hour. Serve straight from the casserole on to
warm plates. Serves 2.
